
A local Dallas’ restaurant haunt needed a little facelift and menu tune up so they called in the experts and what occurred next is nothing short of genius.
Oak, a member of Apheleia Restaurant Group, hereby announces the unveiling of its new summer lunch, dinner and cocktail menus. ARG’s culinary director, Chef Jeramie Robison, speaks to the direction of the new menus and remarks, “Since my arrival at Oak a few months ago, our team has worked patiently and methodically in setting the new direction at Oak and we hope that this commitment is evidenced in what our kitchen is creating.” New dishes such as Blackened Scallop with chorizo rice, green tomato, and sauce creole, and Seared Hamachi with green apple, coriander, and aguachile showcase the clean, global influences in the menu.
Apheleia co-owner, Richard Ellman, notes that Robison is leading the effort to rekindle Oak’s original ethos – simple, clean, elegant, and approachable cuisine. “Chef Robison and his team are doing amazing things and the quality of our food is the cornerstone of the changes we are making at Oak.” The kitchen team also brought in a wood-burning grill, which Chef Robison uses to add another level of flavor to some of his dishes.
Tiffanee Ellman, Richard’s wife and partner, spearheaded the Oak renovation which completed this week in collaboration with interior design firm Jones Baker. “We have enhanced our interiors with a warm and seductive palette of earth tones and added a beautiful sushi bar and intimate lounge area. Custom garnet-toned dining chairs were locally crafted and a central ceiling feature combining brass chandeliers dropping through a cloud of organically hung eucalyptus wood veneer panels was installed.”
Along with the summer lunch and dinner menus is the new craft cocktail menu. Mr. Ellman notes, “We are passionate about our beverage program and are committed to ensuring that it complements our food program both in terms of innovation and sophistication.” Cocktails such as the Lock and Load, a sublime cactus and Anjou Pear margarita, and Eve’s Temptation, a Granny Smith apple and ginger root infused martini, are just two examples of Oak’s ingredient forward trajectory behind the bar.
